Shio Koji is a great seasoning which can tenderise meat. When you cook the chicken in the oven, you can just use Shio Koji as you put salt on it.
Ingredients for Roasted Chicken Legs marinated with Shio Koji
- Chicken legs
- Shio Koji: double amount of the salt when you normally cook chicken
- Garlic or your favourite seasonings
How to cook Roasted Chicken Legs marinated with Shio Koji
1: Prepare the chicken legs as you usually do, like make some cuts or prick the chicken skin with a fork.
2: Apply Shio Koji and your favourite seasonings on the chicken (I put grated garlic and black pepper).
3: Leave them at least for 30 mins and cook in the oven. You don’t have to remove the Shio Koji from the chicken.
Shio Koji is less salty than the normal salt, so I would recommend using a double amount of the salt alone.
What is Shio Koji?
Shio Koji (塩こうじ/塩麹/塩糀) is a Japanese fermented ingredient. It’s made of salt, water and Rice Koji (米こうじ/米糀/米麹). It is called a “magical seasoning” useful for any purpose. We can use it to marinate or tenderize.
